Delicious Southern Style Cornbread Bites perfect for Thanksgiving, light and fluffy with a golden crust.

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • Honey butter (for serving)

Instructions

  1. Preheat the oven to 400°F (200°C). Grease a mini muffin tin generously.
  2. Combine 1 cup of cornmeal, 1 cup of flour, 1/4 cup of sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt in a large bowl.
  3. Whisk together 1 cup of milk, 1/4 cup of vegetable oil, and 2 large eggs in a separate bowl.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 12-15 minutes, or until the tops are golden and a toothpick comes out clean.
  7. Let the cornbread bites cool slightly before serving, ideally warm with honey butter.

Notes

For extra flavor, consider adding jalapeños or corn kernels.
