Recreate the beloved Texas Roadhouse Smothered Chicken in your own home using a pressure cooker for a tender, cheesy, and delicious meal.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 small onion, sliced
  • 1 cup mushrooms, sliced
  • 1 cup Monterey Jack cheese, shredded
  • ½ cup cheddar cheese, shredded
  • 4 slices cooked bacon, crumbled

Instructions

  1. Season the chicken breasts with salt, pepper, and garlic powder.
  2. Sear the chicken in olive oil for about 3-4 minutes on each side.
  3. Remove the chicken and sauté the onion and mushrooms until soft.
  4. Combine the seared chicken back into the pot on top of the sautéed vegetables.
  5. Seal the pressure cooker and cook on high pressure for 10 minutes.
  6. Release the pressure, remove, and shred the chicken.
  7. Assemble the cheese topping by adding shredded cheese back to the pot.
  8. Finish with crumbled bacon before serving.
