  • 1 lb cooked chicken (shredded or diced)
  • 12 oz rotini or penne pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • ½ cup ranch dressing
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Sauté the chicken in a large pot with olive oil or butter, smoked paprika, garlic powder, salt, and pepper for 2-3 minutes.
  2. Pour in the chicken broth, heavy cream, and ranch dressing; stir until well combined.
  3. Toss the uncooked pasta into the pot; stir to coat the pasta in the sauce.
  4. Increase the heat to medium-high and bring to a boil.
  5. Reduce the heat to low and let simmer for 10-12 minutes until the pasta is tender.
  6. Stir in the cheddar and mozzarella cheese until melted and creamy.
  7. Serve warm, garnished with fresh parsley or chives if desired.

Notes

For a flavorful variation, add vegetables or spices to suit your taste. Leftovers can be stored in the fridge for 3-4 days.
