A comforting one-pan dish featuring tender chicken thighs, fragrant garlic, and rich Parmesan cheese over rice.

  • 1 lb boneless, skinless chicken thighs
  • 1 tablespoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Sauté the garlic in a medium saucepan with olive oil until fragrant.
  2. Toast the rice for 2-3 minutes, stirring to infuse it with garlic flavor.
  3. Add the chicken broth and bring the mixture to a boil.
  4. Simmer for 15-18 minutes until the rice is tender and the broth is absorbed.
  5. Season the chicken thighs with smoked paprika, onion powder, salt, and black pepper.
  6. Cook the chicken in a skillet for 5-7 minutes on each side until golden brown and cooked through.
  7. Rest the chicken for a few minutes before slicing.
  8. Fluff the rice, fold in the grated Parmesan cheese until melted and well combined.
  9. Serve the cheesy rice topped with sliced chicken and garnish with fresh parsley.

Let the chicken rest before slicing for juiciness. Substitute chicken thighs with breasts if desired.
