A simple and flavorful slow-cooked Greek chicken dish that is perfect for busy weeknights.

Ingredients

  • 1 cup plain Greek yogurt (whole, 2%, or lowfat)
  • 24 cloves garlic (minced or finely grated)
  • 2 teaspoons fresh lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 1/2 teaspoons kosher salt (divided)
  • 2 pounds boneless skinless chicken breasts or thighs

Instructions

  1. Combine the Greek yogurt, minced garlic, lemon zest, juice, and 1 teaspoon of kosher salt in a medium bowl.
  2. Place chicken breasts or thighs in the bottom of your slow cooker, overlapping slightly for even cooking.
  3. Spoon the yogurt mixture over the chicken, ensuring it’s evenly coated.
  4. Sprinkle the remaining 1/2 teaspoon of kosher salt over the top.
  5. Cover your slow cooker and set it to cook on low for 6-8 hours or on high for about 4 hours.

Notes

Serve over couscous or with warm pita bread, garnished with parsley or olives.
