  • 2 pounds red or baby potatoes, chopped
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 4 cloves fresh minced garlic
  • 1 teaspoon garlic powder
  • 1 tablespoon Italian seasoning
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Place the chopped red or baby potatoes in the bottom of your slow cooker, creating a cozy bed for the chicken.
  2. Arrange the cubed chicken breasts on top of the potatoes, allowing the juices from the chicken to flavor the potatoes as they cook.
  3. In a small bowl, combine the grated Parmesan cheese, minced garlic, garlic powder, Italian seasoning, olive oil, salt, and pepper. Stir until well combined, creating a rich, savory blend.
  4. Pour this flavorful mixture over the chicken and potatoes, ensuring everything is evenly coated for maximum flavor.
  5. Cover the slow cooker and cook on the LOW setting for 4-6 hours or on the HIGH setting for 2-3 hours, checking occasionally until the chicken is cooked through and the potatoes are tender.
  6. Once cooking is complete, sprinkle the shredded mozzarella cheese over the dish. Cover the slow cooker and let it sit for an additional 5 minutes, allowing the cheese to melt beautifully.

Notes
