A comforting slow cooker beef stew with garlic and butter, ideal for busy weeknights.

Ingredients

Scale
  • 2 pounds beef stew meat
  • 2 cups baby potatoes
  • 1 packet onion soup mix
  • 4 cloves garlic, minced
  • 1/2 cup butter
  • 1 cup beef broth
  • 1/4 cup Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Prepare the Slow Cooker: Spray the inside of your slow cooker with nonstick cooking spray to ensure an easy cleanup.
  2. Layer the Meat and Potatoes: Add the beef stew meat and baby potatoes to the prepared slow cooker, layering them evenly for even cooking.
  3. Season the Ingredients: Sprinkle the onion soup mix, garlic powder, onion powder, salt, and black pepper over the meat and potatoes. Then, add the minced garlic and stir gently to combine.
  4. Add the Liquid Ingredients: Pour the beef broth and Worcestershire sauce over the ingredients, ensuring everything is covered for maximum flavor infusion.
  5. Add the Butter: Place the butter pats on top, allowing the richness to melt and permeate the dish as it cooks.
  6. Slow Cook the Beef: Cover the slow cooker and cook on LOW for 360-480 minutes or on HIGH for 240-300 minutes, stirring occasionally until the beef is fork-tender and the potatoes are cooked through.
  7. Serve and Garnish: Serve hot, garnished with fresh parsley if desired for a vibrant touch.

Notes

For extra depth of flavor, consider browning the beef before adding it to the slow cooker. This recipe can be adapted for vegetarians by using plant-based meat substitute.
