A comforting slow cooker beef stew with garlic and buttery potatoes, perfect for chilly evenings.

  • 2 pounds beef stew meat
  • 2 cups baby potatoes
  • 1 packet onion soup mix
  • 4 cloves garlic, minced
  • 1/2 cup butter
  • 1 cup beef broth
  • 1/4 cup Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Prepare the slow cooker by spraying it with nonstick cooking spray.
  2. Layer the beef stew meat and baby potatoes evenly in the slow cooker.
  3. Sprinkle the onion soup mix, garlic powder, onion powder, salt, and black pepper over the ingredients.
  4. Add the minced garlic and stir gently to combine.
  5. Pour the beef broth and Worcestershire sauce over the mixture.
  6. Place pats of butter on top of the ingredients.
  7. Cover and cook on LOW for 6-8 hours or on HIGH for 4-5 hours, stirring occasionally.
  8. Serve hot, garnished with fresh parsley if desired.

Notes

For extra flavor, consider browning the beef before adding it to the slow cooker. Leftovers can be stored for up to three days in the fridge or frozen for three months.
