  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon coarse ground black pepper
  • 1 packet dry onion soup mix
  • 1 cup French dressing
  • 1 cup apricot preserves
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Season the chicken thighs with kosher salt and coarse ground black pepper, ensuring an even coating to enhance the flavor.
  2. Add the seasoned chicken to a cast iron skillet, skin side down. Brown each side for 3-5 minutes until golden, infusing an incredible depth of flavor.
  3. Whisk together the onion soup mix, French dressing, apricot preserves, and fresh thyme until smooth in a bowl.
  4. Pour half of the sauce over the browned chicken in the slow cooker, reserving the other half in the refrigerator to use later.
  5. Set your slow cooker to low and let the chicken cook for 8 hours, or for a quicker option, turn it to high for 4 hours.
  6. Carefully remove the chicken to a baking sheet once cooked.
  7. Cover the chicken with the reserved sauce and broil on high for 1-2 minutes under your oven’s broiler.
