  • 4 cloves garlic, minced
  • 1 tablespoon lime juice (from ½ lime)
  • 1 tablespoon Cajun spice
  • ½ teaspoon salt
  • 2 bell peppers (any color), sliced 1/3-inch thick
  • ½ medium onion, sliced 1/3-inch thick
  • 1 lb large shrimp, peeled and deveined
  • ¼ cup cilantro, chopped
  • 23 teaspoons lime juice (from ½ lime)
  • 8 small flour tortillas
  • Jalapeño ranch dressing
  • 1 avocado, sliced
  • 1 lime, cut into wedges
  • ½ tablespoon olive oil (for cooking shrimp)

Instructions

  1. Create the Flavorful Marinade: In a small bowl, combine the ¼ cup olive oil, minced garlic, 1 tablespoon of lime juice from half a lime, Cajun spice, and salt to create a zesty marinade.
  2. Prepare the Veggies: Slice the bell peppers and onions evenly into 1/3-inch thick pieces. Place them in a medium bowl and pour half of the prepared marinade over the vegetables. Toss well to ensure each piece is coated.
  3. Marinate the Shrimp: Pat the shrimp dry with paper towels. Place them in a separate medium bowl and add the remaining marinade. Stir to evenly coat the shrimp, letting those flavors meld.
  4. Sauté the Shrimp: Heat a large heavy pan over medium heat and add the ½ tablespoon of olive oil. Once heated, arrange the shrimp in a single layer. Sauté for 1-2 minutes on each side until the shrimp is fully cooked and no longer translucent. Transfer them to a plate.
  5. Cook the Vegetables: In the same pan, add the marinated vegetables. Sauté for about 10 minutes until they soften and develop golden brown edges. Stir occasionally for even cooking, and then turn off the heat.
  6. Combine the Flavors: Return the cooked shrimp to the pan with the sautéed vegetables. Add the chopped cilantro and squeeze 2-3 teaspoons of fresh lime juice over the mixture. Toss everything together gently to combine the flavors.
  7. Serve it Up: Serve the shrimp fajitas with warm or toasted flour tortillas, a drizzle of jalapeño ranch, sliced avocado, and lime wedges on the side for an extra zing.
