  • 1/2 cup lime juice
  • 1 medium red onion, diced
  • 1 jalapeño, minced
  • 1 cup diced tomatoes

Instructions

  1. Boil your shrimp in a large pot of boiling water for 2-3 minutes until pink and opaque. Drain and let cool.
  2. Chop the cooled shrimp into small, bite-sized pieces and place in a mixing bowl.
  3. Add the 1/2 cup of lime juice over the shrimp to enhance flavor and tenderness.
  4. Toss in the diced red onion, minced jalapeño, diced tomatoes, and chopped cilantro.
  5. Season with salt and pepper to taste and gently mix until well combined.
  6. Marinate the ceviche for at least 30 minutes before serving to allow flavors to meld.
