A vibrant and refreshing shrimp avocado salad perfect for any meal, combining succulent shrimp and creamy avocado with zesty lime.

  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil

  • Salt and pepper to taste

Instructions

  1. Sautéing the shrimp: In a large skillet, heat the olive oil over medium heat. Add the shrimp and season with salt and pepper. Cook until the shrimp are pink and opaque, about 3-5 minutes. Remove from heat and let cool.

Notes

Best enjoyed fresh but can be stored in an airtight container in the fridge for up to 1 day. Add fresh lime juice to minimize browning of avocado.
