A vibrant and zesty shrimp avocado salad perfect for gatherings or cozy nights at home.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, diced
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste
  • Olive oil (optional)

Instructions

  1. Combine the shrimp, avocados, cherry tomatoes, red onion, and cilantro in a large bowl.
  2. Drizzle with lime juice and olive oil, if using.
  3. Season with salt and pepper to taste.
  4. Toss gently to combine, being careful not to mash the avocados.
  5. Serve immediately, or chill in the refrigerator for 30 minutes before serving.

Notes

Best enjoyed fresh, but leftovers can be stored in an airtight container for up to 1 day.
