A delicious and easy recipe for farfalle pasta with shrimp and broccoli, finished with a squeeze of lemon and a sprinkle of Parmesan cheese.

Ingredients

  • 8 oz Farfalle pasta
  • 1 lb Shrimp, peeled and deveined
  • 2 cups Broccoli florets
  • 1 Lemon, juiced
  • 1/2 cup Parmesan cheese, grated
  • 2 tbsp Olive oil
  • 2 cloves Garlic, minced
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the farfalle pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the shrimp to the pan and cook until pink and opaque.
  4. Toss in the roasted broccoli and cooked pasta with the shrimp.
  5. Squeeze fresh lemon juice over the mixture and season with salt and pepper to taste.
  6. Remove from heat and sprinkle with grated Parmesan cheese before serving.

Notes

For extra flavor, consider roasting the broccoli beforehand. Use starchy pasta water to adjust consistency if needed.
