A simple and delightful sheet pan meal featuring Italian sausage and colorful bell peppers, perfect for busy weeknights.

Ingredients

  • 1 pound Italian sausage
  • 2 cups bell peppers, sliced
  • 1 cup onion, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded mozzarella or provolone cheese
  • 1/4 cup fresh basil or parsley, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F and line a large sheet pan with parchment paper.
  2. Place the sausage, bell peppers, and onion on the prepared sheet pan.
  3. Drizzle everything with olive oil and sprinkle with minced garlic, Italian seasoning, salt, and pepper. Toss everything until well coated.
  4. Spread the mixture evenly across the pan and roast for 20 to 25 minutes, stirring halfway through.
  5. Remove the pan from the oven and top with shredded mozzarella or provolone. Return to oven for an additional 5 to 7 minutes, until cheese is melted.
  6. Finish with fresh basil or parsley and grated Parmesan. Serve hot.

Notes

This dish keeps well in the refrigerator for up to 3 days. Reheat in the oven or microwave. For a spicy kick, try using hot Italian sausage instead of mild.
