A delightful one-pan meal featuring chicken or steak with colorful bell peppers and onions, perfect for busy weeknights.

Ingredients

  • 1 pound chicken breast or flank steak, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Tortillas, for serving
  • Optional toppings: sour cream, guacamole, salsa

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the sliced chicken (or steak), bell peppers, onion, olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper in a large bowl.
  3. Spread the mixture evenly on a sheet pan.
  4. Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  5. Serve in warm tortillas with optional toppings.

Notes

For a vegetarian version, substitute the protein with firm tofu or chickpeas.
