A vibrant and flavorful dish featuring poached eggs in a spiced tomato sauce served on toasted bread. Perfect for brunch or a light dinner.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can (14 oz) crushed tomatoes
  • 4 eggs
  • Salt and pepper to taste
  • 4 slices of bread
  • Fresh parsley for garnish
  • Feta cheese (optional)

Instructions

  1. Sauté the aromatics: Heat the olive oil in a skillet over medium heat. Add the diced onion and red bell pepper, and sauté until softened.
  2. Add the minced garlic, ground cumin, and paprika to the skillet; cook for another minute.
  3. Pour in the crushed tomatoes and season with salt and pepper. Let the mixture simmer for about 10 minutes.
  4. Create small wells in the simmering sauce and crack an egg into each well. Cover the skillet and cook until the eggs are set to your preference.
  5. Toast the slices of bread to golden perfection.
  6. Serve the shakshouka over the toasted bread, garnished with fresh parsley and feta cheese if desired.

Notes

Use fresh vegetables for maximum flavor. Adjust cooking time for eggs according to your preference for doneness.
