Deliciously baked muffins with sun-dried tomatoes and feta cheese, combining nutty whole wheat and all-purpose flour.

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon mixed herbs (such as oregano, basil, thyme)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin.
  2. Mix together the all-purpose flour, whole wheat flour, baking powder, and salt in a large bowl.
  3. Stir in the sun-dried tomatoes, olives, feta cheese, and mixed herbs until evenly distributed.
  4. Whisk together the olive oil, milk, and eggs in another bowl until well combined.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Divide the batter evenly among the muffin cups, filling each about three-quarters full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool slightly before removing from the tin. Enjoy warm or at room temperature.

Notes

For added moisture, consider incorporating grated zucchini or carrot. Avoid overmixing to prevent dense muffins.
