  • 2 packs Instant Ramen Noodles
  • 4 large Eggs (room temperature for best results)
  • 2 cups Fresh Spinach Leaves (can substitute with bok choy)
  • 2 tablespoons Green Onions (sliced)
  • 1 tablespoon Black Sesame Seeds (for garnish)

Instructions

  1. Prepare the Dumplings: In a pot of boiling water, gently add the frozen dumplings. Cook them according to the package instructions until they float to the top—this usually takes about 5–7 minutes. Once done, remove them with a slotted spoon and set aside.
  2. Heat the Broth: In a large pot, pour in the chicken (or vegetable) broth. Stir in the soy sauce and sesame oil, bringing the mixture to a gentle simmer over medium heat.
  3. Cook the Noodles: Once the broth is simmering, add the instant ramen noodles directly into the pot. Cook them according to the package instructions, usually around 3–4 minutes. Stir occasionally to prevent sticking.
  4. Add the Spinach: As the noodles soften, toss in the fresh spinach leaves. They’ll wilt beautifully within the last minute of cooking, infusing the broth with their earthy flavor and vibrant color.
  5. Poach the Eggs: In a separate small pot, bring water to a gentle simmer. Carefully crack each egg into the simmering water, poaching them for 3–4 minutes until the whites are set but the yolks remain runny. Remove with a slotted spoon and drain on paper towels.
  6. Assemble the Bowls: To serve, divide the cooked ramen and broth among four bowls. Gently place the dumplings on top, followed by a poached egg in each bowl. Garnish with sliced green onions and a sprinkle of black sesame seeds.
