A vibrant salad bringing the rich flavors of the Southwest, combining fresh romaine lettuce, black beans, corn, and a zesty dressing.

Ingredients

  • 2 cups romaine lettuce
  • 1 cup cooked black beans
  • 1 cup corn kernels
  • 1 medium tomato, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, diced
  • 1 avocado, sliced
  • 2 tablespoons cilantro, chopped
  • 1/4 cup shredded cheddar cheese
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Rinse and chop the romaine lettuce and place it in a large mixing bowl.
  2. Add black beans, corn kernels, diced tomato, red bell pepper, and red onion to the bowl.
  3. Make the dressing by whisking together lime juice, olive oil, chili powder, ground cumin, salt, and black pepper in a small bowl.
  4. Pour the dressing over the salad ingredients and gently toss to coat everything evenly.
  5. Top with sliced avocado, chopped cilantro, and shredded cheddar cheese.
  6. Serve immediately for the best flavor and texture.

Notes

For added sweetness, consider using roasted corn and keep the dressing separate if preparing ahead.
