Delightful cookie bars combining the chewy goodness of cookie dough with a rich salted caramel filling.

  • 1.5 cups packed light brown sugar
  • 0.5 cup granulated sugar
  • 2 large eggs, room temperature
  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp vanilla extract
  • 1 cup salted caramel sauce
  • Sea salt flakes for sprinkling
  • 1 cup powdered sugar
  • 2 tbsp whole milk or cream
  • 1 tsp ground cinnamon
  • 0.5 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch pan.
  2. Combine the softened butter, packed light brown sugar, and granulated sugar in a bowl.
  3. Cream the mixture until light and fluffy—about 2-3 minutes.
  4. Beat in the eggs and vanilla extract until fully incorporated.
  5. Whisk together the all-purpose flour, baking soda, salt, and ground cinnamon in another bowl.
  6. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  7. Spread half of the dough evenly into the bottom of the prepared pan.
  8. Pour the salted caramel sauce over the dough layer.
  9. Crumble the remaining half of the cookie dough over the caramel layer.
  10. Bake in the preheated oven for 25-30 minutes.
  11. Remove the pan from the oven and let it cool completely on a wire rack.
  12. Whisk together the powdered sugar, whole milk, and remaining vanilla extract until smooth.
  13. Drizzle the glaze over the top, and sprinkle with sea salt flakes.
  14. Cut into bars and serve!

Notes

For extra flavor, consider mixing in chocolate chips or nuts.
