Deliciously rich cookie bars that combine the crunch of a pop tart with a gooey salted caramel center.

Ingredients

  • 1 cup unsalted butter, softened
  • 1.5 cups packed light brown sugar
  • 0.5 cup granulated sugar
  • 2 large eggs, room temperature
  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp vanilla extract
  • 1 cup salted caramel sauce
  • Sea salt flakes for sprinkling
  • 1 cup powdered sugar
  • 2 tbsp whole milk or cream
  • 1 tsp ground cinnamon
  • 0.5 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Cream together softened unsalted butter, light brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. Whisk together flour, baking soda, salt, and ground cinnamon in a separate bowl.
  5. Gradually add dry ingredients to wet mixture, mixing until just combined.
  6. Spread half of the cookie dough into the greased baking dish.
  7. Spread salted caramel sauce over the cookie dough layer.
  8. Dollop the remaining cookie dough over the caramel and spread gently.
  9. Bake for about 20-25 minutes, until the edges are golden.
  10. Allow bars to cool completely before glazing.
  11. Mix powdered sugar, milk or cream, and vanilla to prepare glaze, then drizzle over cooled bars.
  12. Slice the bars into generous squares to serve.

Notes

These bars are best served warm with vanilla ice cream or coffee.
