Salmon Pasta with Spinach and Sun-dried Tomatoes

A delightful salmon pasta dish infused with fresh spinach and sun-dried tomatoes, all enveloped in a creamy sauce.

Ingredients

  • 2 Salmon fillets
  • 2 cloves Garlic, minced
  • 1 cup Heavy cream
  • 2 cups Spinach
  • 1/2 cup Sun-dried tomatoes, chopped
  • 1/2 cup Parmesan cheese, grated
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons Olive oil
  • 8 oz Pasta (optional)

Instructions

  1. Heat the olive oil in a skillet over medium heat until glistening.
  2. Add minced garlic and sauté until fragrant, about 30 seconds.
  3. Place salmon fillets in the skillet and cook until golden brown on both sides, 4-5 minutes per side.
  4. Remove the salmon from the skillet and set aside to rest.
  5. Add heavy cream, spinach, and sun-dried tomatoes to the same skillet, bringing it to a simmer.
  6. Stir in grated parmesan cheese, seasoning with salt and pepper to taste.
  7. Reintroduce the salmon to the skillet and let it simmer for an additional 3-4 minutes until heated through.
  8. Serve the creamy mixture over pasta, if desired, or enjoy on its own.

Notes

Pair with a light green salad and a chilled glass of white wine. Store leftovers in the fridge for up to 2 days.
