Delicious roasted sweet potatoes, perfectly caramelized and easy to make, perfect as a side dish or main component in meals.

Ingredients

  • 4 medium sweet potatoes
  • 3 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Garlic powder, optional
  • Paprika, optional
  • Your favorite herbs, optional

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and cube the sweet potatoes into roughly 1-inch pieces.
  3. Toss the sweet potato cubes with olive oil, salt, pepper, and any optional seasonings.
  4. Spread the seasoned sweet potatoes onto a baking sheet in a single layer.
  5. Roast in the oven for 25-30 minutes, tossing halfway through.
  6. Serve warm as a side dish or in a veggie bowl.
