A creamy and flavorful pasta dish featuring roasted red peppers and garlic, perfect for cozy dinners.

  • 8 oz pasta (penne or spaghetti)
  • 2 red bell peppers
  • 2 cloves garlic
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the red bell peppers and garlic for roasting by cutting the peppers in half, removing the seeds, and placing them on a baking sheet with the garlic cloves. Drizzle with olive oil.
  3. Roast in the oven for 20-25 minutes until soft and charred.
  4. Cool slightly, then peel the skin off the peppers and remove the garlic from its skin.
  5. Blend the roasted peppers, garlic, heavy cream, salt, and pepper until smooth.
  6. Cook the pasta according to package instructions until al dente. Drain.
  7. Combine the sauce with the cooked pasta and stir. Mix in the Parmesan cheese. Serve hot with fresh basil.

Notes

For added flavor, experiment with red pepper flakes or substitute heavy cream with coconut cream for a vegan option.
