Transform humble carrots into a sweet, caramelized side dish with honey and olive oil.

  • 1 lb carrots, peeled and cut into sticks
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the carrot sticks with the olive oil, honey, salt, and pepper in a mixing bowl.
  3. Spread the carrots evenly on a baking sheet.
  4. Roast in the preheated oven for about 25-30 minutes, stirring halfway through.
  5. Garnish with fresh parsley and serve warm.
