Ingredients

Scale
  • 68 large ripe peaches (about 3 pounds)
  • 1/2 cup granulated sugar (for peach puree)
  • 1/2 cup water (for peach puree)
  • 1 tablespoon fresh lemon juice (for peach puree)
  • 1 1/2 cups freshly squeezed lemon juice (from 810 medium lemons)
  • 1 cup granulated sugar (for simple syrup)
  • 1 cup water (for simple syrup)
  • 46 cups cold water (for dilution)
  • Fresh peach slices (for garnish)
  • Fresh lemon wheels or wedges (for garnish)
  • Fresh mint sprigs (for garnish)
  • Ice cubes (for serving)

Instructions

  1. Prepare peaches & peach syrup: Wash peaches, cut in half, remove pits, and chop. In a saucepan, combine peaches, 1/2 cup sugar, and 1/2 cup water. Cook for 10-12 minutes until soft. Remove from heat and cool.
  2. Make peach puree: Transfer cooled peach mixture to a blender, add 1 tablespoon lemon juice, and blend until smooth. Let cool completely in the refrigerator.
  3. Prepare simple syrup: In another saucepan, combine 1 cup water and 1 cup sugar over medium heat. Stir until sugar dissolves (3-5 minutes), then cool.
  4. Prepare lemonade base: Squeeze lemons for 1 1/2 cups juice, strain through a fine mesh sieve. In a pitcher, combine lemon juice, cooled peach puree, and simple syrup. Stir well.
  5. Assemble lemonade: Add 4-6 cups cold water to taste. Adjust sweetness with more simple syrup if needed. Stir to combine.
  6. Chill & serve: Refrigerate for at least an hour. Serve over ice and garnish with peach slices, lemon wheels, and mint sprigs.

Notes

Adjust sweetness to preference. Can use frozen peaches or bottled lemon juice if needed.
