Delightful Red Velvet Cookie Bars topped with rich cream cheese frosting, perfect for any occasion.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon red food coloring
  • 1 cup white chocolate chips
  • 1 cup cream cheese frosting (store-bought or homemade, for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×13 inch baking pan with butter or line it with parchment paper.
  3. Whisk together the flour, cocoa powder, baking soda, and salt in a medium bowl.
  4. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  5. Beat in the eggs one at a time, then add the vanilla extract and red food coloring.
  6. Combine the dry ingredients with the wet mixture, mixing until just combined.
  7. Fold in the white chocolate chips using a spatula.
  8. Spread the cookie dough into the prepared baking pan evenly.
  9. Bake in the oven for 25-30 minutes, or until a toothpick inserted comes out clean.
  10. Cool in the pan for about 10-15 minutes before transferring to a wire rack to cool completely.
  11. Spread cream cheese frosting evenly on top of the cooled bars.
  12. Cut into squares and serve.

Notes

For softest bars, check them a minute or two before the recommended baking time.
