A colorful and healthy sandwich filled with fresh veggies and creamy hummus, perfect for a quick meal or snack.

Ingredients

  • 2 slices Bread of Choice
  • 34 tbsp Creamy Homemade Hummus
  • Rainbow Veggies of choice, thinly sliced (bell peppers, cucumbers, carrots, spinach)

Instructions

  1. Choose Your Bread: Select your favorite bread and lay out the slices on a cutting board.
  2. Spread the Hummus: Generously spread hummus over each slice of bread.
  3. Layer the Rainbow Veggies: Thinly slice your veggies and layer them on one slice.
  4. Assemble the Sandwich: Place the second slice of bread on top of the veggies, pressing down gently.
  5. Slice & Enjoy: Cut the sandwich in half if desired and enjoy immediately.

Notes
