A quick and delicious pasta dish perfect for lazy nights, made with common pantry ingredients.

Ingredients

  • 2 cups cooked pasta (any kind you love)
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach leaves (fresh or frozen)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Grated Parmesan cheese for serving (optional)
  • Fresh basil, for garnish (optional)

Instructions

  1. Heat the olive oil over medium heat until warm.
  2. Sauté the cherry tomatoes for about 3–4 minutes until they start to soften.
  3. Introduce the spinach leaves and cook until wilted, approximately 2–3 minutes.
  4. Enhance the flavors with garlic powder, salt, and pepper.
  5. Add the drained chickpeas and mix well, cooking for an additional 2–3 minutes.
  6. Combine with the cooked pasta and warm through for another minute.
  7. Serve on plates, garnished with Parmesan cheese and fresh basil.

Notes

Feel free to customize with extra veggies or proteins. Leftovers can be stored in an airtight container for up to 3 days.
