Honey Garlic Ground Beef and Broccoli

A quick and delicious meal combining sweet honey and savory garlic with ground beef and crunchy broccoli.

Ingredients

  • 1 pound lean ground beef
  • 3 cups broccoli florets
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/3 cup low sodium soy sauce
  • 1/4 cup honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch (mixed with 2 tablespoon water)
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 cups cooked rice or quinoa
  • 1 tablespoon sesame seeds
  • 2 green onions, sliced

Instructions

  1. Sauté the diced onion and garlic in olive oil over medium heat for about 2 minutes.
  2. Add the ground beef to the skillet and cook until browned, breaking it apart as it cooks.
  3. Add the broccoli florets and cook for 4–5 minutes until just tender.
  4. Whisk together the soy sauce, honey, rice vinegar, ginger, and red pepper flakes (if using) in a small bowl, then stir in the cornstarch-water slurry.
  5. Pour the honey garlic sauce into the skillet, stir to coat, and let simmer for 2–3 minutes until thickened.
  6. Serve the stir-fry over cooked rice or quinoa, garnished with sesame seeds and sliced green onions.

Notes

For extra flavor, consider marinating the ground beef before cooking. Substitute vegetables based on your preference.
