A creamy and rich Butter Chicken recipe that brings the authentic taste of Indian cuisine into your home without too much fuss, perfect for cozy nights.

  • 1 pound Chicken Thighs
  • 1 teaspoon Salt
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Sweet Paprika
  • 1 tablespoon Curry Powder
  • 1/2 cup Greek Yogurt
  • 2 tablespoons Vegetable Oil
  • 2 tablespoons Butter
  • 6 cloves Garlic (Minced)
  • 1 medium Onion (Diced)
  • 1 cup Tomato Sauce
  • 1 teaspoon Sugar
  • 1/2 cup Heavy Cream
  • 1/4 teaspoon Cayenne Pepper
  • 1 teaspoon Garam Masala
  • 1/2 teaspoon Black Pepper
  • 1/4 cup Parsley (Optional garnish)

Instructions

  1. Begin by cutting the chicken thighs into bite-sized pieces. In a mixing bowl, combine them with salt, garlic powder, sweet paprika, and curry powder. Add the Greek yogurt and mix everything until the chicken is well coated. Let it marinate for at least 15 minutes.
  2. In a large skillet, heat the vegetable oil over medium heat. Once hot, add the diced onion and sauté until it becomes translucent, about 5 minutes.
  3. Then, incorporate the minced garlic and continue to sauté for another minute.
  4. Add the marinated chicken to the skillet. Cook for about 5-7 minutes until the chicken turns golden brown.
  5. Pour in the tomato sauce and sprinkle in the sugar. Stir well to combine and allow to come to a gentle simmer for about 10 minutes.
  6. Lower the heat and stir in the heavy cream and cayenne pepper, if using. Allow it to simmer for another 5 minutes.
  7. Add garam masala and black pepper to the sauce. Taste and adjust the seasoning as needed.
  8. Remove from heat and sprinkle with fresh parsley for garnish.
  9. Serve warm with naan bread or fluffy rice.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For a lighter version, use coconut cream instead of heavy cream.
