A delightful noodle bowl featuring savory pork and a refreshing cabbage slaw, inspired by vibrant night market flavors.

Ingredients

  • 8 oz wide Lo Mein noodles
  • 1 tablespoon peanut oil
  • 1 pound ground pork
  • 1/4 cup sliced green onions
  • 2 tablespoons sliced green onions (for garnish)
  • 1/2 cup low-sodium chicken broth
  • 3 tablespoons mirin
  • 2 tablespoons dark soy sauce
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha
  • 4 cups coleslaw mix

Instructions

  1. Cook the Lo Mein noodles according to package instructions; set aside.
  2. Brown the ground pork with 1/4 cup of sliced green onions in the peanut oil until fully cooked and golden.
  3. Whisk together the chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha until well combined.
  4. Add the cooked noodles, coleslaw mix, and the prepared sauce to the skillet with the pork.
  5. Toss everything for 2–3 minutes until well coated; ensure the coleslaw mix is slightly wilted but still crunchy.
  6. Garnish with the remaining sliced green onions before serving.

Notes

For extra crunch, add some roasted peanuts before serving. Can substitute ground pork with ground chicken or turkey.
