A whimsical blend of pizza flavors encased in a warm, flaky pot pie crust, perfect for family gatherings.

Ingredients

Scale
  • 1 large pizza dough (store-bought or homemade)
  • 2 1/4 teaspoons yeast
  • 2 teaspoons sugar (divided into 1 teaspoon for yeast activation and 1 teaspoon for dough)
  • 1 1/4 cups water (at 115°F)
  • 2 tablespoons olive oil
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup pizza sauce (divided)
  • 8 slices low-moisture mozzarella cheese (cut into halves)
  • 4 slices provolone cheese
  • Additional pizza toppings (as desired, cooked if necessary)
  • Baking spray (for ramekins)

Instructions

  1. Activate the yeast by combining it with sugar and warm water; let it rest until frothy.
  2. Prepare the dough by mixing flour, salt, and the remaining sugar, then adding the yeast mixture and oil.
  3. Knead the dough on a floured surface until smooth and elastic.
  4. Let the dough rise in a greased bowl for about 1 hour until doubled in size.
  5. Prepare your fillings while the dough rises, ensuring any vegetables or meats are ready.
  6. Preheat your oven to 425°F.
  7. Assemble the pot pie by rolling out the dough and lining ramekins with it, adding layers of sauce, cheese, and toppings.
  8. Seal the pot pie with a smaller portion of dough, creating slits for steam to escape.
  9. Bake the pot pie for about 20-25 minutes until the crust is golden brown.
  10. Cool the pot pie for a few minutes before serving.

Notes

Serve warm, potentially with a crisp salad or garlic bread.
