A flavorful summer dish featuring juicy grilled chicken topped with zesty pineapple salsa.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh pineapple, diced
  • 1/2 red onion, finely chopped
  • 1/2 bell pepper, finely chopped
  • 1 jalapeño, minced
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your grill or oven to medium heat.
  2. Create the pineapple salsa by combining diced pineapple, red onion, bell pepper, jalapeño, cilantro, lime juice, salt, and pepper.
  3. Prepare the chicken by drizzling with olive oil and seasoning with salt and pepper.
  4. Grill the chicken for 6-7 minutes on each side or until cooked through.
  5. Serve hot, topped with the pineapple salsa.

Notes

For extra flavor, marinate the chicken in lime juice and olive oil before grilling. Store leftovers in an airtight container for up to 3 days.
