  • 2 cups cucumbers, sliced (English or Persian recommended)
  • 1 small red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

  • Freshly ground black pepper, to taste

Instructions

  1. Combine the pineapple chunks, sliced cucumbers, and thinly sliced red onion in a large mixing bowl. Gently toss the ingredients together.
  2. Squeeze the juice of one fresh lime over the salad and season with a pinch of salt and freshly ground black pepper. Toss gently to ensure the dressing is evenly distributed.
