Delicious and juicy pork tenderloin skewers marinated in a flavorful BBQ sauce, grilled to perfection with sweet pineapple and vibrant veggies.

  • 1.5 lbs pork tenderloin, cut into 1-inch cubes
  • 1 medium fresh pineapple, peeled, cored, and cut into 1-inch chunks
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large red onion, cut into wedges and layers separated
  • 1 cup BBQ sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. Prepare the Marinade: In a large bowl, combine the BBQ sauce, soy sauce, olive oil, honey, garlic powder, smoked paprika, black pepper, and salt. Whisk until well blended.
  2. Cube the Pork: Cut the pork tenderloin into 1-inch cubes, trimming any silver skin. Add the pork cubes to the bowl with the marinade.
  3. Chop the Vegetables: While the pork marinates, cut the pineapple, red bell pepper, and red onion.
  4. Assemble the Skewers: Alternate the marinated pork, pineapple, bell pepper, and onion on skewers.
  5. Preheat the Grill: Prepare your grill for direct medium heat and clean the grates.
  6. Grill to Perfection: Place the skewers on the grill and cook for about 12-15 minutes total, turning until all sides are nicely charred.
  7. Serve and Enjoy: Once cooked, let the skewers rest for a couple of minutes, then serve hot.

Notes
