A vibrant and flavorful dish with a bright marinade made from fresh lime and orange juice, perfect for elevating roast chicken for any meal.

Ingredients

  • 4 chicken pieces (legs or thighs)
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh orange juice
  • 4 cloves garlic, minced
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1/4 cup fresh cilantro, chopped
  • 2 cups chicken broth
  • Lime wedges (for garnish)

Instructions

  1. Mix lime juice, orange juice, garlic, cumin, paprika, chili powder, salt, and pepper in a bowl. Marinate the chicken pieces in this mixture for at least 60 minutes, preferably overnight.
  2. Preheat the oven to 425°F (220°C).
  3. Place the marinated chicken on a baking tray and roast for 35-40 minutes, or until the skin is golden and the internal temperature reaches 165°F (75°C).
  4. Prepare rice by cooking it in chicken broth and mixing in chopped cilantro.
  5. Serve the roasted chicken on a bed of cilantro rice, garnished with lime wedges and extra cilantro.

Notes

Let the chicken marinate overnight for the best flavor. Use a meat thermometer to ensure proper cooking. Fresh herbs can enhance the flavor; feel free to add more if desired.
