  • 2 cups basmati rice (rinsed and soaked for at least 30 minutes)
  • 4 cups water (for cooking the rice)
  • 1/2 cup dried apricots, chopped
  • 1/2 cup raisins
  • 1/2 cup pistachios, chopped
  • 1/2 cup almonds, slivered
  • 1/4 cup orange zest
  • 1/4 cup sugar (adjust to taste)
  • 1 teaspoon saffron threads (dissolved in warm water)
  • Salt to taste
  • 1/4 cup butter or ghee (for sautéing)
  • Ground cinnamon (optional, for added flavor)

Instructions

  1. Begin by rinsing the basmati rice under cold water until the water runs clear. Soak it in fresh water for at least 30 minutes.
  2. While the rice soaks, take your saffron threads and dissolve them in a tablespoon of warm water. Set it aside to let the flavor develop.
  3. After soaking, drain the rice and transfer it to a large pot. Add 4 cups of water and a pinch of salt. Bring it to a gentle boil, then reduce the heat to low, cover, and let it simmer for about 15-20 minutes or until the rice is tender and fluffy.
  4. In a separate skillet, melt the butter or ghee over medium heat. Add the chopped apricots, raisins, pistachios, and almonds. Sauté until the fruits begin to soften and the nuts are lightly toasted, about 5-7 minutes.
  5. Once the rice is cooked, gently fluff it with a fork to separate the grains. Add the sautéed mixture, orange zest, sugar, and dissolved saffron to the pot. Stir carefully to combine.
  6. Taste the rice and adjust the sugar and salt as needed. Sprinkle in some ground cinnamon if desired.
  7. Transfer the Jeweled Rice onto a serving platter, garnishing with additional nuts, dried fruits, or a sprinkle of cinnamon. Serve warm.

Notes

Customize by swapping dried fruits or nuts based on preference. This dish can be made vegan by using olive oil instead of ghee.
