A vibrant dish of fluffy basmati rice layered with sweet dried fruits, crunchy nuts, and warm spices, perfect for celebrations.

Ingredients

  • 2 cups basmati rice
  • 1/2 cup dried apricots, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup slivered almonds
  • 1/2 cup pistachios, chopped
  • 1/4 cup raisins
  • 1 tablespoon orange zest
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon saffron threads (optional)
  • 4 cups water
  • Salt, to taste
  • 2 tablespoons butter or olive oil
  • Fresh herbs (such as parsley or cilantro) for garnish

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for about 30 minutes. Drain.
  2. Bring 4 cups of water to a boil in a large pot. Add the soaked rice and salt. Cook until the rice is just tender, about 10-12 minutes.
  3. Melt the butter or heat the olive oil over medium heat in a separate pan. Add the chopped dried fruits, nuts, orange zest, ground cinnamon, and ground nutmeg. Sauté for 2-3 minutes until fragrant.
  4. Drain the rice and add it to the pan with the fruit and nut mixture. If using saffron, steep it in a tablespoon of hot water and add it to the rice mixture. Gently fluff everything together until evenly mixed.
  5. Cover the pot and let it sit on low heat for 10 minutes to let the flavors meld.
  6. Serve warm, garnished with fresh herbs.

Notes

Rinsing the rice thoroughly ensures fluffy grains. Can use olive oil for a vegan version.
