Persian Jeweled Rice

A festive and colorful Persian rice dish filled with nuts, fruits, and saffron, perfect for celebrations.

Ingredients

  • 2 cups basmati rice (Rinsed and soaked for at least 30 minutes)
  • 4 cups water (For cooking the rice)
  • 1/2 cup dried apricots, chopped
  • 1/2 cup raisins
  • 1/2 cup pistachios, chopped
  • 1/2 cup almonds, slivered
  • 1/4 cup orange zest
  • 1/4 cup sugar (Adjust to taste)
  • 1 teaspoon saffron threads (Dissolved in warm water)
  • Salt to taste
  • 1/4 cup butter or ghee (For sautéing)
  • Ground cinnamon (optional) (For added flavor)

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Soak in water for at least 30 minutes.
  2. Dissolve saffron threads in a small bowl of warm water.
  3. Toast the chopped pistachios and slivered almonds in a large skillet over medium heat with butter or ghee.
  4. Sauté the dried apricots and raisins in the skillet for a couple of minutes.
  5. Bring 4 cups of water to a boil in a large pot, then add the drained soaked rice and a pinch of salt.
  6. Stir in the dissolved saffron and orange zest once the rice is almost done cooking.
  7. Fold in the nut and dried fruit mixture gently.
  8. Cover the pot and reduce heat to low, allowing the rice to steam for another 10 minutes.
  9. Fluff the rice gently and serve on a platter, garnished with ground cinnamon and extra nuts if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently with a splash of water.
