A vibrant and refreshing noodle salad featuring colorful veggies and a creamy peanut dressing.

Ingredients

  • 8 oz rice noodles or lo mein noodles
  • 1 cup red cabbage, shredded
  • 1 cup carrot, julienned
  • 1 cup bell peppers, thinly sliced
  • 1/2 cup cucumbers, thinly sliced
  • 1/4 cup green onions, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup peanuts, chopped
  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon lime juice
  • Salt and pepper to taste

Instructions

  1. Cook the noodles according to package instructions, then rinse under cold water and set aside.
  2. In a large bowl, combine the red cabbage, carrot, bell peppers, cucumbers, green onions, and cilantro.
  3. Prepare the peanut dressing by whisking together peanut butter, soy sauce, rice vinegar, sesame oil, honey (or maple syrup), lime juice, salt, and pepper in a separate bowl until smooth.
  4. Add the cooled noodles to the vegetable mixture and pour the peanut dressing over the top.
  5. Toss everything together until the noodles and vegetables are evenly coated.
