Whole Peach Mochi

A refreshing twist on traditional mochi, filled with luscious ripe peaches and wrapped in chewy dough.

Ingredients

  • 1 cup mochiko (sweet rice flour)
  • 3/4 cup filtered water
  • 1/4 cup granulated sugar
  • 1/4 cup potato starch (for dusting)
  • 3 pieces ripe peaches

Instructions

  1. Start by washing your peaches thoroughly. Once clean, cut them into wedges, removing the pit. If you prefer a smoother filling, you can also puree the peaches instead!
  2. In a bowl, combine 1 cup of mochiko with 1/4 cup of granulated sugar. Gradually add in 3/4 cup of filtered water while mixing until you achieve a smooth, thick batter.
  3. Transfer the mochi batter to a microwave-safe bowl. Cover it with a damp cloth to prevent it from drying out. Microwave the mixture on high for 1 minute. Stir, then microwave for another minute, and finally, microwave for an additional 30 seconds. The dough should become sticky and slightly translucent.
  4. Dust your counter with potato starch to prevent sticking. Transfer the cooked mochi dough to your floured surface. Allow it to cool for a minute, then knead it gently until it’s easy to handle. Divide the dough into 6 equal portions.
  5. Flatten each dough portion into a disc. Place a peach wedge in the center and lovingly fold the mochi around the peach to form a ball, pinching the seams together to seal.
  6. Arrange the finished mochi on a plate dusted with potato starch. Place them in the refrigerator for about 30 minutes to set.

Notes

Pair with matcha tea or vanilla ice cream for a delightful experience.
