  • 1 cup diced fresh peaches
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the cottage cheese, sugar, vegetable oil, eggs, and vanilla extract until well combined.
  3. Whisk together the flour, baking powder, baking soda, and salt in another bowl.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the diced peaches gently.
  6. Divide the batter evenly among the muffin cups, filling them about three-quarters full.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Cool before serving.
