A vibrant summer dish featuring grilled chicken marinated in a sweet and tangy peach balsamic glaze.

  • 4 boneless, skinless chicken breasts
  • 2 ripe peaches, sliced
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Whisk together balsamic vinegar, olive oil, honey, salt, and pepper until combined.
  2. Place the chicken breasts in the marinade, ensuring they’re well-coated. Let them sit for at least 30 minutes.
  3. Preheat your grill to medium-high heat.
  4. Grill the marinated chicken for about 6-7 minutes on each side, or until cooked through.
  5. Grill the peach slices for about 2-3 minutes per side until slightly charred.
  6. Serve the grilled chicken topped with charred peach slices and fresh basil.

Notes

For deeper flavor, marinate the chicken for 1-2 hours if time allows. You can also use nectarines or plums as substitutes for peaches.
