A simple and delightful side dish featuring crispy, caramelized carrots infused with garlic and topped with Parmesan cheese.

Ingredients

  • 1 pound carrots, peeled and cut into sticks
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the carrot sticks in a bowl with olive oil, minced garlic, salt, and pepper until well coated.
  3. Spread the carrots in a single layer on a baking sheet.
  4. Roast for about 20-25 minutes, or until tender and starting to caramelize.
  5. Sprinkle grated Parmesan cheese over the carrots.
  6. Return to the oven for an additional 5 minutes, or until the cheese is melted.
  7. Garnish with fresh parsley before serving.

Notes

For an extra kick, consider adding a pinch of chili flakes when tossing with oil and garlic. Ensure even cooking by cutting the carrots to a uniform size.
