Ingredients

  • 1 cup almond flour
  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup (or honey)
  • 1/2 cup protein powder (chocolate or vanilla)
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 cup dark chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish or line it with parchment paper.
  2. In a large bowl, mix together the almond flour, cocoa powder, protein powder, and salt until well blended.
  3. Whisk together the maple syrup (or honey), melted coconut oil, eggs, and vanilla extract until combined and slightly frothy.
  4. Pour the wet ingredients into the dry ingredients and stir until you have a smooth, thick batter.
  5. If you’re feeling indulgent, fold in the dark chocolate chips for extra richness.
  6. Pour the batter into the prepared baking dish, spreading it evenly to ensure even cooking.
  7. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out mostly clean, with just a few crumbs sticking to it.
  8. Allow the brownies to cool in the pan for a few minutes before transferring them to a wire rack. Once cool, cut into squares and serve.

Notes

For a richer chocolate flavor, use dark cocoa powder. Store brownies in an airtight container at room temperature for up to 4 days.
