Ingredients

Scale
  • 1 loaf French bread
  • 8 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 ripe bananas
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup chopped pecans
  • Maple syrup to taste

Instructions

  1. Preheat your oven to 350°F and generously grease a 9×13 inch baking dish with melted butter.
  2. Slice the French bread into 1-inch thick pieces and arrange them artfully in the greased baking dish.
  3. Tuck the banana slices between the bread to ensure each piece is surrounded by the fruit’s natural sweetness.
  4. Whisk together the eggs, whole milk, heavy cream, granulated sugar, brown sugar, vanilla extract, ground cinnamon, and salt until smooth and creamy.
  5. Pour the egg mixture evenly over the layers of bread and banana, pressing down gently.
  6. Cover the baking dish with foil and refrigerate overnight or for at least 6 hours.
  7. Remove the dish from the refrigerator, uncover it, and sprinkle the chopped pecans over the top.
  8. Bake uncovered for 45 to 55 minutes until the custard is set and the topping is golden brown.
  9. Let the casserole rest for about 10 minutes before serving.
  10. Drizzle with warm maple syrup to taste and enjoy.

Notes

Use stale or day-old French bread for best results and consider customizing with additional toppings like chocolate chips or berries.
