A healthier twist on traditional fried chicken, featuring a crunchy cornflake coating and juicy chicken, baked to perfection.

  • 2.5 pounds chicken legs and thighs, bone in, skin removed (about 8 pieces)
  • 1 cup flour
  • 1 tablespoon cornstarch
  • 1.25 cups ginger ale or seltzer
  • 0.75 teaspoon garlic powder
  • 0.25 teaspoon cayenne pepper
  • 45 cups cornflakes
  • Nonstick cooking oil spray
  • Salt and pepper (to taste)

Instructions

  1. Prep your ingredients by preheating your oven to 425°F (220°C) and lining a baking sheet with parchment paper.
  2. Create the chicken marinade by mixing flour, cornstarch, garlic powder, cayenne pepper, salt, and pepper in a bowl. Gradually pour in ginger ale while stirring to form a smooth batter.
  3. Coat each piece of chicken in the batter, ensuring it’s well covered.
  4. Prepare the cornflakes by crushing them into smaller pieces, optionally adding extra garlic powder or spices.
  5. Coat the chicken in the crushed cornflakes, pressing down to adhere.
  6. Arrange the coated chicken pieces on the baking sheet and lightly spray with nonstick cooking oil.
  7. Bake in the preheated oven for 40-50 minutes, until cooked through and golden brown.
  8. Rest the chicken for a few minutes before serving with your favorite sides.

Notes

For a gluten-free version, use gluten-free flour and cornflakes. Allow cooked chicken to cool without covering it to maintain its crispiness.
