Baked Salmon with Spinach and Mozzarella

A simple yet delicious dish combining succulent salmon fillets, fresh spinach, and creamy mozzarella.

Ingredients

  • 4 pieces of salmon fillets (6 ounces each)
  • 2 cups of fresh spinach, chopped
  • 1 cup of shredded mozzarella cheese
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of lemon juice
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil over medium heat in a large skillet. Add the minced garlic and sauté for about 30 seconds.
  3. Add the chopped spinach, stirring frequently until wilted down, about 3-4 minutes. Season with salt, pepper, and oregano.
  4. Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle lemon juice over the fillets and season them.
  5. Distribute the sautéed spinach evenly over the salmon. Sprinkle shredded mozzarella on top of the spinach.
  6. Bake for about 15-20 minutes until the salmon is cooked through and the cheese is melted and bubbly.
  7. Serve with lemon wedges for an extra zesty touch.

Notes

For a twist, add sun-dried tomatoes or olives to the spinach mix. Try different cheeses if desired.
